Mixed Bean Chilli – Serves Four.
Dice the onion and sauté in a heated saucepan for about five minutes.
Add the garlic, two teaspoons of cumin, and one teaspoon of paprika
and cook for another two minutes.
Add four hundred grams of tinned tomatoes and allow to simmer,
for twenty to twenty-five minutes.
Pour in eight hundred grams of mixed beans and stir them into the mixture
until they are warmed through.
To finish, garnish with fresh coriander,
serve with plain or wholegrain rice,
a side of guacamole would do nicely, too,
and then, apparently, drown the whole fucking thing in tomato ketchup.
